First off, I am not a baker, and if the truth be known, I will always opt for a cheese plate as I absolutely adore cheese of any kind! This is the simplest dessert ever. I make it with all kinds of fruit; it is fabulous with apples. This galette is all about the fruit. There are only a few ingredients, it comes together in 15 minutes, and bakes for about 40-50 minutes. Serve it with whipped cream or ice cream.
SUMMER PEACH GALETTE - Recipe (makes two, freeze one!)
1 package of two pie crusts thawed, sold frozen, thaw in the frig first. Or make your own, but seriously why?
8 peaches, a bit under ripe, sliced in 1/4" slices
zest and juice of half a lemon
1/2 cup turbinado sugar or regular - plus a little xtra to throw on the top
2 scant tablespoons cornstarch
a pinch of salt
4 tablespoons apricot jam - optional, I just happened to have some
METHOD
Preheat the oven to 375 degrees. Gently roll out the premade crust on a floured surface to form a slightly elongated circle. In a bowl, mix the peaches with lemon zest, juice, sugar, cornstarch, and salt, then divide the mixture in half. Arrange the peaches like dominoes on the rolled crusts, leaving about 1.5 inches around the perimeter then fold as pictured, sprinkle the crust with a dusting of turbinado. Brush each with half of the jam and bake until golden, approximately 40-50 minutes.
