NEW YORK CITY PUSH CART ONIONS

Yo, I'm a native New Yorker and being one, I've had lots of NYC push cart hot dogs, seemingly on every other corner in Manhattan, seriously the best hot dogs anywhere! Slathered with mustard, warm sauerkraut, and fabulous push cart peppers and onions. This is my rendition of the famous sidewalk condiment. Enjoy!


PUSHCART ONIONS - Recipe (makes about 4 or so cups)

3 tablespoons vegetable oil

3 large yellow onion cut in 1/4" lengths (about 4 cups)

1 large green pepper cut in 1/4" lengths

1/3c ketchup

1 tablespoon white vinegar

2 tablespoons sugar

1/4 teaspoon kosher salt

1 teaspoon chili powder

4 dashes of tabasco

3/4 cup water

METHOD

Place a medium-sized saucepan over medium-high heat, add the oil, and then incorporate the onions and peppers. Sauté them, stirring for 10 minutes. Add the remaining ingredients and let it simmer for another 10 minutes or until it reduces to the consistency of tomato sauce. Chill, and serve warm or at room temperature.
