MINT JELLY THE EMERALD GROTTO

I call this jelly the "Emerald Grotto," reminiscent of the magnificent grotto on the Amalfi Coast. It is super easy and delicious with lamb T-bones, rack or leg, or chicken. Lamb T-bone recipe posts soon!

MINT JELLY - Recipe (makes 1.5 cups)

1 small can of pineapple juice - 6 ounce

1 cup of water

1 cup of sugar

1 cup of fresh mint leaves

1 teaspoon lime juice

pinch of salt

3 drops of green food color

1 packet of gelatin

METHOD

Combine everything except gelatin in a small saucepan, bring to a boil, reduce to a steady simmer for 10 minutes, strain, stir in food color, allow to cool for 5 minutes, then stir in gelatin and refrigerate until it sets. An ice bath will expedite the process.
