Hawaiian Mac Salad - Recipe by Koji Cooks

This is simply the best Mac salad recipe! I grew up having Mac salad at New York delis—this one is better. The key is to slightly overcook the pasta and to toss it with cider vinegar while it is still warm. We make it often, and it is always a hit. The pretty lady pictured making the salad is my good friend Jeannie, who is visiting from Hawaii.
HAWAIIAN MAC SALAD - Recipe (makes 6-8cups)
2 cups of elbow macaroni - cooked slightly over recommended cook time
3 tablespoons cider vinegar
1/2 cup finely sliced scallions
1/2 cup grated carrot
DRESSING
2 tablespoons light brown sugar
1 tablespoon soy sauce
1/4 cup milk
5-6 tablespoons mayo
20 grinds of black pepper
scant 1/2 teaspoon of kosher salt
METHOD
Cook the pasta about two minutes over, drain, and while it is still warm, place it in a bowl and sprinkle with the vinegar. Allow it to cool for about 10 minutes, stir in scallion and carrot. Toss with dressing and refrigerate.
