BBQ Sauce/Tonkatsu Sauce - recipe by Koji Cooks

This sauce is another versatile and widely favored creation of mine. I first developed it at Santacafe in Santa Fe for a crispy rice noodle chicken salad that became very popular. It is also showcased on the cover of my cookbook "East Meets Southwest." I've utilized the same sauce for my signature BBQ oysters with pancetta at Mike's on the Avenue in New Orleans. It can be used similarly to BBQ sauce and complements grilled dishes such as satay, and naturally, tonkatsu pork.


ASIAN BBQ SAUCE/TONKATSU - Recipe (makes about 1 cup).
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon oyster sauce
1 tablespoon rice vinegar
1.5 teaspoons sesame oil
1/2 teaspoon grated ginger
1/2 teaspoon dijon mustard
METHOD
Combine in a bowl and srir until mixed well.
