We often start with a tartare. A tartare is always fresh, light, healthy, and delicious, not unlike sushi but without all the work. For this one, we are using tuna and serving it with white corn tortilla chips. Background shrimp, salmon and ceviche in future posts.


AHI TARTARE - Recipe (serves 2)
8 ounces of freshest raw tuna cut in 1/8" dice
1/4 cup thinly sliced scallions and a few snipped chives -optional
1.5 tablespoons truffle mayo or mayo plus truffle salt
1/2 teaspoon rooster brand sriracha
basil leaves for garnish - optional
corn tortilla chips
METHOD
In a small bowl, mix together the tuna, scallions, chives, mayo, and sriracha. Taste for salt and refrigerate. Top with a few basil leaves and serve with tortilla chips.
