Furikake, a seasoning mix for rice or noodles, is simple to prepare with many possible variations. The basic mixture should contain toasted nori cut into small pieces, sea salt, sugar, and both black and white toasted sesame seeds. Additional ingredients are optional but can certainly enhance the blend. This recipe makes a generous amount, and if stored in an airtight container, it will last a long time. Use it on rice, noodles, fish, seafood, chicken, or meat to significantly enhance the flavor of any dish. Sesame seeds can be toasted (white and black together) in a dry skillet over medium heat, stirring until lightly golden. Nori can be toasted by waving it for 5 seconds on each side over an open low flame.


FURIKAKE - Recipe (makes 1+ cups)

2/3 cup toasted white sesame seeds.

2 tablespoons toasted black sesame seeds.

1/2 cup toasted nori cut into (roughly) 1/8" squares.

1.5 teaspoons sea salt

1 tablespoon turbinado sugar

2 teaspoons aonori or dulse seaweed

2 tablespoons bonito flakes

1 teaspoon shiitake powder

1/2 wasabi powder

1/4 teaspoon chile flakes

METHOD

Place all the ingredients in a dry food processor and pulse until the sesame seeds are partially crushed, about 10 pulses over a minute. Keep in an airtight container at room temperature.
