Delicious Duck Pizza Recipe - Koji Cooks Shares His Secret!

I had my first Duck Pizza at Wolfgang Puck's restaurant, Spago, in Los Angeles, marking my initial encounter with California Pizza. Unlike the New York pizza I was accustomed to, California Pizzas use fewer ingredients and not as many toppings, often allowing the crust to show through, and sometimes omitting red sauce. This pizza utilizes the leftover cooked legs from the Koji Cooks Duck Al'Orange recipe, but you can use any rustic cooked crumbled sausage if you don't have cooked duck! I typically serve pizza with a simple salad, like Romaine lettuce with a basic Balsamic Vinaigrette—refer to Koji Cooks appetizer sampler for this recipe.
Stretching pizza dough by tossing it in the air is a skill best reserved for experienced pizza makers. Personally, I opt for a rolling pin to accomplish this. Furthermore, I utilize a perforated pizza pan coated with olive oil spray to make the process easier. The pizza reheats and freezes very well. The key to a great pizza is avoiding overcooking; it's ready sooner than you might expect. The bottom should have light marks, and the top of the dough should be soft with a slight browning around the edges.
DUCK PIZZA - Recipe (makes one 12" pie)
1 10-oz ball of fresh pizza dough
flour to roll
olive oil pan spray
1 tablespoon extra virgin olive oil
1 Roma tomato, very thinly sliced
5 thin slices of Havarti cheese
1/2 of a seeded red bell pepper, julienned - see photo
1/2 of a small red onion thinly sliced from top to bottom - see photo
4 cremini mushrooms thinly sliced - see photo
1 cup of coarsely chopped cooked duck
kosher salt and fresh ground black pepper
METHOD
Position your oven rack in the center and preheat the oven to 450 degrees on convection. Roll the dough into a 12-inch circle on a floured surface, then carefully transfer it to a perforated 12-1/2-inch pizza pan that has been sprayed with pan spray. Heat a griddle or steel pan over high heat, spray it generously with pan spray, and place the vegetables in groups across the pan. Cook them until they start to show marks, then remove and set aside - see photo.
Gently brush the prepared pizza dough with olive oil, distribute the Roma tomatoes evenly, and then add the cheese as shown in the photo. Next, spread the veggies uniformly over the pie and top with the Duck and a sprinkle of salt & pepper. Bake for 10 minutes or until the edges are lightly browned.
