This is an exceptionally simple yet impressive recipe for Asian French Toast. In this version, I use Chinese Scallion Bread sliced into 1/2" pieces, though brioche or Japanese milk bread work well too. I've garnished the French toast with a few paper-thin slices of Krakus ham. It's a rich dish, perfect for serving one slice per person, or two if you're particularly hungry. The scallions and ham add a subtle savory touch. On its own, the French toast resembles bread pudding and would make a delightful dessert.
ASIAN FRENCH TOAST - Recipe (serves 4)
4 slices of brioche cut 1/2" thick
2 large eggs
1/4 cup milk
2 tablespoons scallions, finely sliced.
2 teaspoons turbinado sugar
1/4 cup of water
4 tablespoons sweet butter - divided
2 tablespoons raisins
3 tablespoons real maple syrup
8 super thin slices of Krakus ham
1 tablespoon powered sugar for dusting
METHOD
In a small bowl, whisk the eggs, milk, and scallions together. Pour this mixture into a shallow dish, like a pie plate, and coat both sides of the bread with it. Let the bread soak in the egg mixture for 30 minutes, then turn it over and soak for another 30 minutes. Heat a skillet over medium heat, add half the butter, and place the soaked bread in the skillet along with any remaining egg mixture. It's fine if it pools around the toast. Cook the bread for 3 minutes on each side or until golden brown. Keep it warm in a 300-degree oven. In the same skillet over medium heat, add the raisins and water, stirring until the raisins slightly plump. If the water reduces too much, add more to maintain 2-3 tablespoons. Stir in the remaining butter and maple syrup, mixing thoroughly. Serve the warm French toast with a two slices of ham ribboned on each a generous spoonful of maple sauce and a liberal dusting of powdered sugar.
